Chef Michael Scipione cooks with his heart and soul, which he believes they are the two main ingredients to his success. Growing up in an Italian household with parents, Emilio (Mouse) and Annette. The South Philadelphia born and raised native creates traditional style dishes bursting with deliciousness, unique menu ideas and presentation for his catered events, which include flavors that satisfy the palate's of the most crucial critics.

Loire - Blanc: 2018 Domaine du Collier Saumur Blanc
Paired with Idziabel cheese and quince or Faroe Island Salmon ceviche with mango, diced tomato, diced cucumber, cilantro, and lime zest.

Burgundy - Blanc: 2008 Daniel-Etienne Defaix Chablis 1er Cru Les Lys
Paired with Ahi tuna tartare, togarashi with hints of ginger and orange, and yuzu aioli.

Burgundy - Rouge: 2009 Domaine Follin-Arbelet Romanée St.Vivant Magnum
Paired with venison loin medlllion, light brushing of dijon, garnished with fresh  thyme, leaves, finished with a amarena cherry/venison demi 

Bordeaux: 2006 Château Margaux Magnum
Paired with American Wagyu Tartare featuring parmesan tuile mini taco, black truffle oil, mascarpone, and Italian white sturgeon caviar.
